makes 6 to 8 servings
1 can (1 pound, 1 oz.) pitted, dark, sweet cherries
1 can (1 pound) sliced peaches, drained
1 packages (12 oz.) dried apricots
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1/2 cup orange juice
1/4 cup lemon juice
3/4 cup light-brown sugar, packed
sour cream or sweetened whipped cream
Preheat oven to 350 degrees. Turn cherries and their liquid into a 2 quart casserole. Add peaches, apricots, orange and lemon peels and juices. Sprinkle with brown sugar. Bake, covered 1 1/2 hours. Let cool slightly; then refrigerate covered for several hours or overnight, or until well chilled. Serve with sour cream or sweetened whipped cream.
