(believe me this is excellent!) - 12 to 16 servings
2 1/4 cups all purpose flour
1 cup firmly packed brown sugar
2 1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg, lightly beaten
1 teaspoon baking soda
3/4 cup granulated sugar
3/4 cup corn oil
1 1/2 teaspoons ground ginger
1/2 cup chopped walnuts
1 cup buttermilk
1 teaspoon baking powder
Preheat oven to 350 degrees. Grease 9x13 inch glass baking dish. Combine flour, sugar, oil, 2 1/2 teaspoon cinnamon, ginger and salt in large bowl, blend well. Transfer 1/2 cup of mixture to small bowel. Stir in walnuts and 1/2 teaspoon cinnamon and set aside. Add buttermilk, egg, baking powder and baking soda to remaining mixture and blend thoroughly. Turn batter into prepared pan, spreading evenly.
Sprinkle with nut mixture. Bake until tester inserted in center of cake comes out clean, about 35 4inutes. Serve warm or let cool.
