serves 4 people
4 cups milk
1/2 cup sugar
3 eggs, slightly beaten
1 teaspoon grated orange peel
1/2 cup yellow corn meal
1/2 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon salt
1 cup very dark molasses
Scald milk with half the sugar. Add corn meal and stir constantly until smooth, well blended and slightly thickened. Remove from stove and add eggs, orange peel, the rest of the sugar, cinnamon, ginger, salt and molasses. Mix well together and put into a baking dish about 2 inches deep. Cover with wax paper. Bake 1 hour at 450 degrees in a pan of water. Serve hot with vanilla ice cream on top.
Nostaglic Note: Above may be cooked over fireplace in a kettle for two hours.
